After the meat is processed, it is frozen within 24 hours. We age our beef 12-14 days on average, or longer by request. Animals left unprocessed for 10 days in the case of cows and 5 days for hogs may be processed as a general cut, which consists of the most popular cuts we do. If you are selling your animal, please have your buyer complete a cutting instruction form.
